Sweet potato's sweet delights

Hanover 4-H Clubs recently hosted their parish achievement day with 42 schools whipping up an array of dishes derived from sweet potato.

Throughout the day, several displays were unveiled by participating basic to secondary schools. A variety of dishes and beverages, many boasting a high level of creativity, were revealed.

Some outstanding dishes included; potalsa - salsa made from sweet potato and paired with sweet potato chips. There was also sweet potato strips, alligator shaped sweet potato bread, pickles, wines and many other tempting and unique dishes.

Not difficult

All the dishes were prepared by the students with some assistance from their home economics teachers. Home economics teacher at Hopewell High school,Tasheika Matthie, noted that dishes were not very difficult to prepare.

Unusual dishes

"The students were very enthusiastic about participating and since the focus was on sweet potato, we did some research for some unusual dishes. For example, most people didn't know that sweet potato could be used to make drops and gizzardas, so we chose to highlight its different uses," Matthie explained.
